Fancy a refreshing coffee with a sweet twist? This homemade iced coffee is a healthier version of the classic caramel macchiato – but without refined sugars. The star of this recipe? A creamy caramel sauce based on Medjool dates from dadelskopen.nl . Easy, nutritious and irresistibly delicious!
Ingredients
For the date caramel:
- 12 Medjoul dates fromdadelskopen.nl , pitted
- 120 ml vegetable milk of your choice
- 60 ml water (plus extra if necessary)
- ½ teaspoon vanilla extract
- ¼ teaspoon sea salt
For the macchiato:
- 1–2 teaspoons maple syrup (optional, for extra sweetness)
- ½ teaspoon vanilla extract
- 180 ml vegetable milk
- Ice cubes
- 2 shots of espresso or 120 ml of strong coffee
- Extra date caramel for garnish

How to make date caramel:
Place the dates, milk, water, vanilla and sea salt in a blender or food processor.
Are your dates a bit dry? Then soak them in hot water for 5-10 minutes first.
Mix until smooth. Add extra water if caramel is too thick.
If desired, pour into a squeeze bottle for easy decoration. -
How to make a macchiato:
Spoon 1 tablespoon of date caramel into the bottom of a glass (and optionally along the rim as well).
Add the maple syrup, vanilla and milk and stir well.
Fill the glass with ice, but leave some room at the top. -
Finishing:
Pour the espresso or coffee slowly over the ice.
Finish with a swirl of date caramel on top. -
